 Easy Peasy Pizza

Pizza does not need to be unhealthy.  This homemade version will leave you wanting to create homemade pizzas with different varieties of toppings and flavours to tantalise your tastebuds.  You will want to recreate this Easy Peasy Pizza recipe again and again.  So let us get started and cook together! 

Base
- 400g self-raising flour
- 1/2 tbs bicarbonate soda
- a splash of olive oil 
- salt and pepper 
- tepid water to make into a dough

Sauce
- 300g tin chopped tomato
- tbs dried basil
- a splash of olive oil
- salt and pepper

Toppings
- sliced red onion
- thinly sliced courgette
- red chillis sliced
- 100g of crumbled feta cheese
- sprinkle of dried basil
- drizzle of olive oil    (feeds 2)


  1. Put all the base ingredients in a mixing bowl and slowly add the tepid water bit by bit mixing everything together to form a dough.  If your dough ends up too wet then add more self-raising flour and if it is too try then add a little bit more tepid water.  Tip the dough onto a hard surface a knead the dough until it is well combined.   
  2. Put a 10" frying pan on the hob at low heat.  Roll out one of the dough balls using a rolling pin about the thickness of a £1 coin.  Transfer the rolled out dough into the frying pan and push it into the sides of the pan.  While that is slowly cooking on low heat we will make the pizza sauce.
  3. Put all the sauce ingredients into a food processor and whizz until smooth.  Pour have the sauce onto the cooking base and spread with the back of a spoon.
  4. Add the toppings and spread them out evenly.  Crumble the feta cheese and drizzle the top with olive oil.  
  5. Then the bottom of the base will be nicely cooked.  Transfer the pan under the grill on a low where the topping will cook for about 3-5 minutes.
