Spinach, Leek and Feta Filo Pie 


This recipe is just a dream to make and taste!  It can be altered to suit your taste buds and your preference.  With high in protein with eggs and spinach which can be bulked up as a meal with homemade wedges or even just serve with a side salad.  I went for the wedges and salad.  I am not afraid of carbs!

                Ingredients

       Filo Pie                                                                                                     
                                                                                                                              
  • 5 Large Eggs                                                                             
  • 200g of Feta cheese crumbled
  • 3 tbs of Vegetable oil                                 
  • 400g Spinach                                                            
  • 1 Leek Halved and Sliced 5mm Thick
  • 1/2 Onion Chopped
  • 3 Garlic Segments Chopped
  • 50 grams of Grated Cheddar Cheese
  • Filo Pastry
  • 1/2 tbs of Nutmeg 
  • 1/2 tbs of Cayenne Pepper
  • 1 tsp Oregano or Basil
  • Greaseproof Paper and a Baking Dish 30 cm x 20 cm roughly


  1. For the wedges cut 6 medium-sized potatoes into quarters and coat with vegetable oil, salt and pepper and put in the oven gas mark 6 for 30 mins. 
  2. In a large pot add vegetable oil.  Once the oil is heated add the chopped onions, garlic and sauté for 10 minutes. Once the onions are soft add the sliced leeks and cook for a further 10 minutes.
  3. In a bowl crack the 5 eggs and add the crumbled feta cheese, cheddar cheese, nutmeg, cayenne pepper, oregano, salt and pepper.
  4. In the pot with the leeks add the spinach so it wilts for a few minutes.  
  5. While that’s cooking, crunch up the greaseproof paper (it will be easier to use) and place it in the baking tray.  Brush some oil onto the greaseproof paper and layer 4 sheets of filo pastry so it covers the bottom of the tray but overlaps the tray so you can later fold it in.  In between the filo sheets, brush with oil and season with salt and pepper.
  6. By this time the spinach will have wilted so mix everything together.  Transfer the leeks and spinach into the bowl with the egg mix.  Combine everything together and pour it into the tray.
  7. Fold in the overlapped filo sheets so it covers the egg mix then brush with oil and cook in the middle self for 20 minutes. Your wedges may be ready so put them at the bottom of the oven, so they stay warm. 


Ta-Dah!!

This is really an amazing meal.  You could add peppers and mushrooms to this as well.  My daughter does not like mushrooms which is the reason i can add them to many of my dishes.  Enjoy and don't forget to share the recipe and check out the Crafty Food Kitchen Instagram page.
