Pesto Salmon Crumb
When it comes to a healthy salmon dish then this is the one to try. Pesto Crumb Salmon with Crushed Minted Potato and Peas served with Zesty stems of Broccoli and Asparagus. This is a plate full of goodness for the body! Salmon is rich in omega 3 fatty acids, asparagus with its antioxidants and anti-inflammatory properties and broccoli which is packed with health benefits such as vitamin C. Oh, and let us not forget the humble potato! A staple in everyone's diet. Sounds good? Well, let us get started...
- 2 Salmon Fillets
- tbs soft cheese
- tbs spoon pesto
- 1 lemon zest
- a slice of bread for breadcrumbs

Crushed Minted Potato and Peas
- 5 small potatoes
- a small cup of frozen peas
- tsp of mint sauce
- tsp butter
Lemon Brocolli and Aparagus
- 8 to 10 aparegus stems
- 8 broccoli stems
- 1 lemon juice
- tbs olive oil
- Cut the potatoes into 4 and put them in a pot and begin to boil on a full heat.
- Put the oven on gas mark 6. Place the salmon on a baking tray skin side down.
- Mix the pesto and soft cheese together and place on top of the salmon. Put the slice of bread in a food processor to make the breadcrumbs. Sprinkle the crumbs on top of the salmon pushing it slightly into the pesto mix. Sprinkle the lemon zest over the top. Put in the oven for 20 mins.
- Break the ends of the asparagus to get rid of the bitter taste. Place the broccoli stems and the asparagus in a frying pan. Add a little water in the pan and cover with a lid so they steam cook.
POUR YOURSELF A GLASS OF WHITE WINE AND ENJOY IT FOR 10 MINUTES!
5. Add the peas to the boiling potatoes. Allow boiling for a couple of minutes so the frozen peas thaw.
6. Drain the potatoes and peas then add the butter and mint sauce and use a potato crusher to roughly
smash everything together.
7. The broccoli and asparagus should be steam cooked. Drain the water and add the olive oil and
lemon juice allowing for the greens to soak up that zesty flavour.
8. Finally take out your salmon from the over. Lets plate up!!!
